(The kings oyster, Boletus of the steppes, Eryngii)
This mushroom, which is popular in Europe, is the largest in its variety. It has a preference for hardwood and is easy to cultivate. The king oyster mushroom can also be cultivated on straw, just like the common oyster mushroom. However, in that case, the yield and quality are considerably lower.
The King oyster mushroom grows above ground on the roots of hardwood in the wild. The cap of the mushroom can grow from 3 tot 12 cm and is round at first, but becomes funnel-shaped soon. The stem grows 3 to 10 cm long, is quite thick and tapers downwards. They grow solitary or in small groups. The cultivated mushrooms are considerably larger than the mushrooms found in the wild.
The Eryngii has a firm bite and a slightly nut-like taste. The mushroom can be combined perfectly with the Italian kitchen and especially with lamb, pork and fish. Little is known about its nutritional value, however it is expected to be similar to that of the common oyster mushroom.
